Brewed in the style of a Berliner Weiss with a prolonged mash which enables the natural production of lactic acid resulting in the tart & sour flavours. Each batch is aged in a slightly different way to give a totally unique touch. Check the batch number for more details on how it was brewed. Freedom in a bottle!

#1: Extended 24 hour mash, fermented clean with house yeast then conditioned for 4 weeks, then dry hopped with Bramling Cross
#2: Extended 24 hour mash, fermented with clean house yeast, aged in Burgundy wine barrels for 6 weeks
#3: Extended 24 hour mash, fermented with Saison Yeast, aged in Burgundy wine barrels for 6 weeks, then part blended with #2 which had been ageing for 10 weeks in burgundy wine barrels
#4: Extended 36 hour mash, fermented with Saison Yeast, aged in Burgundy wine barrels for 4 weeks, then blended back with #3 which had been ageing in burgundy wine barrels for 12 weeks
#5: 36 hour mash, fermented with clean house yeast, aged in London Cru wine barrels for 8 weeks, blended back with #4 which had been ageing in Burgundy wine barrels for 16 weeks
#6: 36 hour mash, fermented with Saison Yeast, aged in London Cru wine barrels for 4 weeks, dry hopped with Centennial
#7: 36 hour mash profile, fermented with Saison Yeast, then heavily dry hopped with Vic Secret hops
#8: The most blended beer we have ever bottled and kegged, our Headbrewer had some real fun with this batch! Four beers were blended together, a Burgundy barrel aged Saison(45% of blend), an Irish Whiskey barrel aged sour mash saison fermented ale(20% of blend), a Belgian Red ale aged in wine barrels sourced from a London urban winery called LDN CRU(25% of blend), with one whiskey barrel of our Strong Scotch Ale Hercules Hold(10% of blend)
A perfect blend of light tartness, oak on the nose with a slight sweetness to finish.
